Chocolate with Almonds and Hazelnuts

I got this recipe from the cooking show, New Scandinavian Cooking. Its a wonderful show with beautiful scenery as well as cool info about the regions in which they are cooking.

Well last week was their Holiday episode in Sweden and the hostess made such a delicious looking home made chocolate dessert that I had to try my hand at it. The only thing in the recipe that wasn’t dairy-free was the nougat, so I did without that, but attempted to add at least a simulation of the delicious nougat taste.

Ingredients
3/4 lb. (340 g) dark chocolate
2 oz (50 g) flaked almonds
2 oz (50 g) chopped roasted hazelnuts
2 oz (50 g) walnuts
Zest of 1 orange
1/8 teaspoon vanilla extract (or to taste, but a little goes a long way)
a few sprinkles of cinnamon
splash in some non-dairy milk of choice if you need to loosen it up (I used about 1 tablespoon vanilla oat milk)

Directions
Melt the chocolate in a saucepan over another saucepan with boiling water. When it is completely melted together, mix in the nuts, vanilla extract, zest and cinnamon.

Line a bread loaf tin with waxed or parchment paper. Pour in the mixture. Let it harden for a few hours in the fridge before removing it.

    are you using a dark chocolate with not dairy products in it? got a recommendation?

  4. Yup, dark chocolate is the healthy chocolate and should be dairy-free. If you look at the crappier brands like Nestle they’ll have milk even in the dark chocolate but generally speaking, dark chocolate has no dairy. 🙂

    My mom likes dark chocolate bars with chilis in it. Seems like a strange combo but she says its pretty good.

  7. This reminds me of the time I was in Zurich where they had chocolates in big blocks and they’ll hack off how much you want. Choc sold was sold by weight.

    I gotta say you’re pretty experimental when it comes to food. I never dreamed of making my own chocolate bars.

  8. I miss that “New Scandinavian Cooking” show — our PBS doesn’t get it here in North Carolina. They had some great episodes about fruit breads that I really enjoyed. Plus, as you say, the scenery is amazing.

    There’s a really nice combination you may like as well, involving cardamom and pistachios. It is probably pretty similar to the recipe you used, just adding some “chai” style spices. Cardamom is safe to start with, with its notes of German and (amazingly) Indian notes.

    When I was growing up my mom only used Cardamom around the holidays when we made traditional German breads and desserts. I didn’t know it was an Indian spice until much later. Funny…

  9. Good to know! I love Cardamom and as you know, I love chai.

    My friend Annie suggested I try chili powder next, so I think I’m gonna give that a try. My mom likes chocolate with chili powder in it (baffles me) so I’m gonna try to make some for her bday coming up.

    I was never a fan of fruit bread, I probably still wouldn’t be but I should give it another try.
