Seabirds Food Truck

The best vegan/vegetarian food truck in my area was at my work today for our health and fitness event.

I speed walked a 5k and then I enjoyed beer battered avocado tacos and a vegan nutella cupcake.

It was insanely delicious!

This picture has nothing to do with this blog entry but I wanted to share some laughs 🙂  No idea what its supposed to mean though.

Did some epic shopping at the grocery store yesterday.  Lots of delicious food in store.  I promised myself as I was putting it all in the refrigerator that I wouldn’t forget to take pictures of the food this time.

Well…..I already failed…..forgot to take a photo of the vegan spinach lasagna I had for dinner last night.  Topped with basil leafs.  And garlic bread.  Soooooo good.

Well at least I have the rest of the week to make up for last night’s omission.  And tomorrow (Tuesday) I’m meeting a friend for some Thai food vegan dinner.  So….lots in store.

Until then……enjoy the cow and dolphin frolicking in the sea 🙂

Jury Duty

On Monday I was summoned to the Santa Ana court house for jury service.

I’m one of those weirdos who hopes to get on a case.  I love the legal system and it is about as close as I can ever afford to get to law school.  So I always wanted to be selected for a trial, but so far no luck.

I did get an opportunity to walk around beautiful downtown Santa Ana on my 2 hour lunch break.  I got a tasty veggie burrito and then walked over to Gypsy Den for an iced mocha.

The people at the burrito place were completely baffled by the concept of not eating meat.  They were totally perplexed, like they had never heard such an outlandish notion.  And they still tried to bring me chicken soup haha.

Lunch at El Torito

Today I went with coworkers to lunch. El Torito is great because they have delicious food and they do have some veg friendly items on the menu, which is more than can be said for most Americanized restaurants.

What’s more, they actually put effort into their vegetarian dishes. Most places, if they have a vegetarian dish at all is just an afterthought; some sad little platter they threw together from the condiments bucket.


So needless to say, I had a fabulous lunch and I’m still feeling quite full at dinner time! I ordered the Roasted Vegetable Fajita platter. Wow….my jaw dropped. Nice variety of vegetables including yams, potatoes, asparagus, carrots, bell peppers, onions and a few different types of squash. And topping that is a chile relleno filled with finer chopped vegetables (just have them leave out the manchego cheese).

Plus guacamole, a fruit salsa and vegetarian beans. AND…..chips and salsa! Yup, I ate well ^_^

Santa Fe Good Stuff

I’ve been loving this new item I tried recently called Santa Fe Good Stuff. It is really delicious, with a good sauce. I usually have one for lunch about once per week. If you see it in the store, give it a try!

And…..I’ll have some real recipes coming soon…..I have some recipe plans that I can’t wait to try this weekend.

and to promote a bit of discussion…..honey is a gray area of veganism. What are your thoughts on honey? I mostly use agave but recently I had a sinus infection and honey is great for fighting those. I did buy a jar of honey for the first time in years recently to help with the sinus infection, but I made sure it was cruelty-free and that respect is given to the bees. The honey I bought also does not follow the practice of moving bees around to keep them producing all year. Thoughts?


Washington DC – International City of Eatin'

Back from Washington DC and what a fun time I had! I had front row seats for the keynote speaker of the conference – Colin Powell. He was really inspiring!

Now, on to the food. Washington DC has the most excellent food options of any city I’ve been to. Cuisine from all over the world was only a short walk from my hotel, and I did my best to try as many as possible. Which only amounted to a few, but the conference kept me busy!

Sunday night, after walking to the mall, which is where the Washington Monument and the White House are located, we went to a wonderful Mexican/Tapas restaurant called Oyamel. They had a decent number of vegetarian dishes but only 1 vegan dish, aside from the guacamole. It didn’t matter though….it was the best guacamole I have ever tasted, and we ended up ordering 4 bowls.

Monday night we had dinner at the Decatur House, which was originally the closest residence to the White House. The banquet was exquisite, and they were nice enough to give me, aside from the salad, a heaping plate of steamed asparagus and carrots. The salad was outstanding.

Prior to dinner at the Decatur House, we stopped at the Zambian Embassy for drinks and H’ors D’oeuvres. Pictured in my hand is a flower petal, topped with a slice of grapefruit and sweet mustard. All the other ones had a pine nut nestled in there also, but that particular one didn’t.

On Tuesday (June 16), which was my 30th birthday, I walked to the less tourist section to check out one of the popular Ethiopian restaurants, Etete. I probably looked funny trying to eat with no utensils, but it was lots of fun, very messy and very tasty. I ate my lunch so quick that I forgot to take a picture of my lunch, so the people sitting next to me were nice enough to let me photograph theirs. I don’t know exactly what they got, but it was from the vegetable section of the menu.

Finally, my most favorite photograph… standing on the podium of the circulation desk in the reading room of the Library of Congress. What a dream come true!

My Favorite Cooking Show on DVD!

I just discovered the full DVD collection from my favorite cooking show. So naturally, I bought all of the seasons!

Mexico, One Plate at a Time airs every Saturday (in southern California) on PBS. I love it, I always joke that its my favorite time of the week. And it really is! Sometimes I have a margarita while I watch that week’s episode, to get in the proper fiesta mood.

While this show is omni, the show’s host, Rick Bayless is a master chef and he shares many recipes that are vegetarian and vegan friendly. The guacamole he makes always looks so good. It is one of my goals to eat at his top-rated Mexican restaurant, Topolobampo the next time I’m in Chicago.
