This picture has nothing to do with this blog entry but I wanted to share some laughs 🙂  No idea what its supposed to mean though.

Did some epic shopping at the grocery store yesterday.  Lots of delicious food in store.  I promised myself as I was putting it all in the refrigerator that I wouldn’t forget to take pictures of the food this time.

Well…..I already failed…..forgot to take a photo of the vegan spinach lasagna I had for dinner last night.  Topped with basil leafs.  And garlic bread.  Soooooo good.

Well at least I have the rest of the week to make up for last night’s omission.  And tomorrow (Tuesday) I’m meeting a friend for some Thai food vegan dinner.  So….lots in store.

Until then……enjoy the cow and dolphin frolicking in the sea 🙂

Aloo Palak

I’ve got a mild cold so I wasn’t feeling in the mood to cook anything fancy. At the grocery I found a new dish from Tasty Bite called Aloo Palak. It is potatoes and spinach simmered with onions tomatoes and spices.

I added some vegetable dumpling balls that I bought at the local Asian grocery and it made for a great sick day meal, along with some bread.

Looking forward to making that pumpkin soup this weekend, so until then…..have a good week everyone.

Cooking As Meditation – A Perfect Evening

I moved into a new apartment last weekend, so I’ve been very busy with packing, unpacking, and getting stuff set up. I haven’t had very much time to cook, so I haven’t had the best eating habits lately.

But last night (Sunday evening) I cooked my first real meal in my new place, and enjoyed it on the patio. I have a gas range now, instead of electric, which I don’t have too much experience with, so I decided to do something easy – curried vegetables. It turned out excellent! For dessert, I had a raw pudding that I bought from the local Mother’s Market (an awesome mostly vegetarian market).

I’ve been picking up some cool things to cook with…Bed Bath & Beyond really loves me right now. I’m really excited about my new refrigerator; it has the freezer on the bottom, so the main compartment is eye-level and easier to reach things. I also bought a fancy new eco-friendly set of pots and pans called Greenware. They are great to cook with.

As for my dinner….I chopped up some broccoli, cauliflower, butternut squash and green beans, sauteed them a bit and then simmered in some Bombay Curry. For dessert, the raw pudding. When I tried a sample in the market, I nearly did a backflip it was that delicious.

Bengal Lentils & "Steak" Tofu

I made this for lunch yesterday, and it was surprisingly good. I’ve made the lentils before, which I bought at Trader Joe’s, but it seemed something was missing.

My buddy Matt, who recently made the switch to being vegan, gave me some “steak” tofu to try, and so I figured that hearty tofu would go great with some hearty Indian-spiced lentils. And it definitely hit the spot.

I’m usually a fan of light lunches, and this was perfect fare. Not too heavy, and it kept me satisfied until dinner time.

I put a bit of extra virgin organic olive oil in a pan and fried up the tofu for a minute or two, on medium heat, just to get it warm and ever so slightly crispy. Delicious!

Punjab Eggplant with Squash

Tonight I made a Punjab eggplant and squash dinner. This is my favorite “weeknight” dinner. Its super easy, and super tasty. I stir-fried some squash and onions, mixed it with brown rice (which I had left over from my stuffed bell pepper dinner), and I added a box of the Punjab Eggplant sauce.
I know, I cheated. The Punjab Eggplant was ready made, but it is soooooooo good, and super quick to heat up. Filling but doesn’t leave you stuffed, and it really is a delight for the palate.
