St. Patty's Day Roast

For St. Patrick’s Day, instead of the traditional corned beef and potatoes, I made something far more delicious and easier to make.

I bought a Tofurkey roast, which can be found at any Wild Oates or Whole Foods. I’m sure it can be found at other places as well, but I haven’t checked. The stuffing that’s in the center is the best.

I made some red potatoes and a few vegetables (to add a bit o’ green!), and rye bread rounded out the dish. Topped with Mushroom & “Gibblet” gravy, and this is some seriously hearty eatin’.
